Savour a deliciously creamy Bircher Muesli.This is a great start to the day! Guaranteed to stave off any hunger pangs until lunchtime, this recipe is loaded with fiber, protein and a good dose of antioxidants.

2 cups oatmeal1½ cups apple juice2 apples ⅓ cup chopped sugar-free dried apple½ cup soy yogurtheaped ⅓ cup seasonal berries, such as raspberries and blueberries1 Put the oats in a large mixing bowl and pour the apple juice over to cover. Cover the bowl and leave to soak overnight in the refrigerator.
2 In the morning, peel and grate the apples and add them to the oatmeal mixture. Stir in the dried apple and yogurt.
3 Spoon the mixture into bowls. Scatter the berries over each helping and serve.
variation: To make a gluten-free version of bircher muesli, you can use 1²/³ cups buckwheat flakes instead of the oats. Alternatively, you could try 2¼ cups quinoa flakes, but you will need
an extra scant ²/³ cup apple juice.
