Cherry and almond ice cream


You can whizz up this creamy ice cream in a Vitamix machine in seconds!
One of the great things about this recipe is that it uses frozen cherries, making it much more inexpensive than using fresh cherries. You could make it with soya milk, instead of soya cream, but the taste and texture from the cream is worth the extra effort and expense!

250ml soya cream
40g blanched almonds
3 tbsp fruit sugar
480g frozen cherries

1. Pour the soya cream into the Vitamix machine and add the almonds Secure the 2-part lid and select VARIABLE speed
2. Turn the machine on and increase the speed to 10, then to HIGH for 20 seconds or until well mixed. Turn the machine off.
3.Remove the lid and add the sugar and the cherries. Secure the 2-part lid again and select VARIABLE speed 1. Turn the machine on again and increase the speed to 10, then to HIGH, using the tamper to push the ingredients into the blades.
4.In about 30 seconds, the sound of the motor will change and 4 mounds should form in the mixture. Stop the machine and serve immediately. Alternatively freeze immediately and allow it to stand for 20 minutes at room temperature before serving.
